Jytte Teff is flour from the teff plant, a naturally gluten free African acient grain. We import our Teff from the Netherlands. There are many varieties of white and brown teff. Our Jytte Teff is made with white teff.
The positive qualities of teff, such as good taste, high nutritional value and the fact that it is gluten free, appeals to people who have chosen a particular diet for example athletes, celiacs, vegetarians, diabetics and those who want to lose weight. With a low glycemic index (GI), Teff supplies energy in the form of glucose, and helps keep glucose levels stable over many hours. In addition, the high iron content causes the number of red blood cells to increase and adds higher oxygen capacity. You can replace the plain flour with teff or add some teff in your recipes. It’s very nice to mix into bread and cake recipes. Teff is eaten and grown a lot in in Ethiopia and Eritrea. The plant’s history goes back thousands of years back (4000-1000 BC.) The seeds are the size of poppy seed. The name of the plant comes from Teffa or thaf, meaning lost, which shows that the seeds are so small that they are almost gone, but they are full of energy!
